Zucchini Tots Recipe

Another way to use up the summer abundance of garden fresh zucchini!

As noted in the August Issue of AMLA's "Our Voice", here is another zucchini recipe that is sure to be a hit with the kids

This recipe was contributed by Barb Somrack, wife of AMLA Lodge 8 Member, Andrew Somrack in addition to the one published in the August issue. Enjoy

Zucchini Tots

  • 1 cup of grated zucchini
  • 1 egg
  • 1/4 cup onion grated or minced
  • 1/4 cup breadcrumbs (Italian, plain or Panko all work)
  • 1/4 cup cheese of your choice (I've used parmesan and cheddar)

DIRECTIONS:

Wrap the grated zucchini in paper towels and squeeze all the water out of it. Then mix all the ingredients in a bowl. Spray a mini-muffin pan with cooking spray to keep them from sticking (be sure to coat well!). Pack the muffin cups with the zucchini mixture. If you don't pack the mixture the tots fall apart. Bake on 375 for 15 to 20 minutes until the tots are golden brown.
